Mini pizza squares, starters and snack recipe
Ingredients:
1 packet britannia crackers
1 medium size capsicum, finely chopped
1/2 medium sized onion, finely chopped
1/2 medium sized tomato, finely chopped
4 tbsp corn, washed and par boiled
2 tbsp black olives(optional)
100 gm cheese (processed or mozeralla)
Pizza sauce or ketchup to taste
Italian seasoning to taste
Salt to taste
Chilli flakes to taste
Black pepper to taste
Method:
Mix capsicum, onion, tomato, corn, salt and black pepper in a small bowl and microwave it for 4 minutes. They should be cooked and stir them and cool it to dry the water released from tomatoes.
Mix ketchup and Italian seasoning in a different plate. Grate the cheese.
Take the cracker biscuit, evenly apply the pizza sauce or ketchup mixture onto it. Sprinkle some grated cheese, spread the cooked vegetables and then Cover it with the grated cheese. Sprinkle chilli flakes and oregano on top. Top it with some black olives if u want some dramatic look.
Arrange them in a microwave safe plate and microwave for 1 minute or till the cheese melts and start bubbling.
Serve and eat.

Once they are cooked and cooled down, please do not microwave in oven again as the biscuits will loose their crunch by that time. Microwave only when you need to serve them.
