Eggless apple cake with Apple filling decoration with jelly and white chocolate

Apple cake is interesting and total hit in the family as it has apples and the taste of apple with all those little pieces of apple in the filling giving it a interesting twist. It is a super hit with any age as you do not normally get fruits in the cakes in the usual cakes we buy from market. Moreover, this cake has natural sweetness of apples and flavours released from it. It does not require any other moistening agents as the apple puree in the cake keeps it naturally soft and delicious.
I have searched different recipes for Apple cakes and then baked my own and it turned out to be great and super hit in my family. Try it out and share your experience.

Eggless apple cake with Apple filling decoration with jelly and white chocolate




Ingredients:

For Apple cake:

1 cup flour
1/2 cup oil (any refined oil)
1/2 cup apple puree
4 tbsp powdered sugar
4 tbsp milk powder
1/8 cup milk
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp fruit salt(Eno)
1/2 tsp vanilla essence

For Apple filling:

Half medium sized chopped apple
3 tbsp sugar
6 tbsp water
1/2 cup whipped cream

For icing:

Whipped cream to requirement
Few drops of raspberry ruby color

For decoration:

1 cup water
1/2 cup sugar
1 tbsp powdered gelatin
Few drops of raspberry ruby color

Method:

Apple Cake recipe

In a mixer jar, add diced apple with skin and make it into puree.
In a bowl, add oil, apple puree, milk powder, milk and powdered sugar and mix till fluffy.
Prepare a microwave proof round shape container, apply oil in the container, cut unprinted paper in the bottom of container and line in the paper, then apply some oil on the paper. Set aside.
In a sieve, add flour, baking powder and baking soda and sift in the wet ingredients. Mix well with vanilla essence till fluffy. If the mixture is not fluffy and light add in milk little by little, only if required. After that Add Eno and mix well.
Pour in the batter into the prepared container and microwave for 5 minutes.
Demould when the cake is cooled down.

For Apple filling

In a pan, add sugar and water and let them boil. Once they are boiled, add in the chopped apples and let it cook for 4-5 minutes. Take out the apples and let them cool. You can use the left over sugar and water syrup to moisten your cake.

Assembling

Firstly, Cut the cake in 2 equal slices or more equal slices. It is always advisable to put cake upside down. Now moisten the cake slices with leftover sugar syrup.
Put the cake upside slice down, now apply some whipped cream in between and a thick layer at all the sides.
Now fill the middle cavity with the cooled down apples and spread evenly in the cavity. Apply little more whipped cream on the top of apples to level out the cake and put another slice of cake. Crumb coat the whole cake and chill in freezer for 2-3 hours.
You can now decorate as per your wish.

Decoration:

You can decorate it as per your wish. What I did was, I added the ruby color in the whipped cream and cover the cake with it.
Then I cover the cake with colored jelly, color I used is same the raspberry ruby color.
I decorated it with white chocolate flower and shavings.
I also created two half chocolate apple filled with cream and apples to signify the apples in the cake, the apple shape was made with the apple shaped silicon mould.

To make the gelation, take a pan, add sugar and water and let it boil. After the sugar is dissolved and the mixture starts boiling, add the color as per your choice and then add in the powdered gelatin and mix it in the mixture. Do this on the low flame, let it cook for a minute and pour on the cake and spread fast to finish it off.
If your gelatin solidifies in the pan, you can always add little water and heat up the mixture again and It'll liquidify and ready to use.
