Eggless upside down apple cake without condensed milk
Ingredients:
1/2 cup refined flour
1/3 cup oil
1/3 cup milk
1/3 cup powdered sugar
4 tbsp milk powder
3/4 medium sized apple sliced
1/2 tbsp vanilla essence
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp fruit salt(Eno)
1 tbsp powdered sugar
Butter or oil for greasing
Method:
Take the cake glass mould or any big glass bowl. Grease butter inside the mould. Now line up the bottom and one inch of the side of the mould with Apple, sprinkle the 1 tbsp powdered sugar on those apple slices. Put it in the oven at 200 degree for 10 min.
Now Mix the milk, powdered sugar, milk powder and oil in a bowl till mixed properly and till it's little bit fluffy.
Sift the refined flour, baking powder, baking soda together and mix it with the wet ingredients. Now mix it till it is properly mixed in only one rotation movement. When the mixture is properly mixed, add vanilla essense, mix again. Mix till it is light and fluffy. If the mixture seems to be thick add 1tbsp milk and mix again. I don't think more milk would be required in the batter. The batter should be of medium flowing consistency like idli batter.
Till this time the 10 min of Apple baking will b done. Check the apple should b light brown in color by now. If not then bake them for 5 more min. And if the apples are more brown, do not worry that works too.
Now add the fruit salt(Eno) in the batter, mix thoroughly for a minute and then Pour the batter in the mould evenly. Lightly tap the mould and put it in the microwave for 5 minutes. Do not open the gate while the clock of the oven is ticking.
The cake will be double the size of the batter poured. To check whether it's cooked, put a toothpick in the cake, if it comes out clean then it is properly cooked. If not then, cook it for 1 more minute in the oven.
You can remove this cake even hot if you have greased the mould properly with butter. Put the cake downside up and enjoy the beauty.
Enjoy the cake as it is or top it with some choclate sauce.
This cake is not to be kept in refrigerator uncovered. Cover it with cling film if you are keeping it in the fridge. Or else just keep it outside covered with something.
