No bake cookie dough cookies
This is a very easy recipe within 15 minute, you can carry it in your bag and whenever want a hit of coffee take a bite into it.
It is the best way to have coffee for all the lazy butts out there, you can store it in the refrigerator for a week and can serve it to the guests or your friends as they look delectable and are healthy too.
Be creative with it and you'll get even better results. You can serve it as sweet in the festive season.
Preparation time: 5 minutes
Cooking time: 10 minutes
Resting time: 1-2 hours
Serves: 15-16 people
Ingredients:
16 Wheat biscuits around 90 gms (Marie biscuits)
4 roasted and chopped cashews
4 roasted and chopped almonds
2 roasted and chopped walnuts
2 tbsp cocoa powder
1/2 tsp coffee powder
3 tbsp condensed milk
Method:
Crush the biscuits in a blender jar or in a zip lock bag, till they are crumbly.
Take it out in a bowl.
Now add cocoa powder and coffee powder and mix well, till there are no lumps of cocoa and coffee in the mixture.
Add in the chopped dry fruits and give it a light mix.
Now start adding condensed milk spoon by spoon and mix the biscuits mixture to come it together like a dough.
Here are few tips:
If you want your cookies to be soft and chewy, you have to add the condensed milk till the mixture comes together as dough.
And If you want them little crumbly, then you add only 2 tbsp of condensed milk and then add little melted butter and milk to make dough. This method will reduce the shelf life of your cookies.
When the dough is prepared, make it in the shape of a wood log, cover it with cling film or foil and put it in the refrigerator till it is firm.
After it is firm, unwrap and decorate with silver edible leaf or vark.
You can also dip them in melted chocolate and decorate with some more chopped dry fruits.
